Tempeh Temptation

Have you tried tempeh? It's a great source of protein, has a subtle nutty taste, and has a firmer texture than tofu. So if you're looking for something different, give this recipe a try. Then try substituting it for meat in some of your other favorite dishes.

You will need:

-1 block of tempeh, cut into 1 inch cubes
-2 tablespoons oil
-1 large tomato, sliced
-1 small onion, chopped
-1/4 cup soy sauce
-3 tablespoons brown sugar

1. Heat oil in a large non-stick pan over medium heat.
2. Add tempeh and cook about 8 to 10 minutes to brown.
3. Add onions and cook until translucent, about 7 minutes.
4. Add tomato and cook another 5 minutes.
5. Mix brown sugar into soy sauce then add to pan. Stir and cook another 3 minutes.

And feel free to get creative, add more or different vegetables-broccoli would be great!
