Taco Simplicity

Earlier this week, I put together this simple, fresh, and healthy taco-and reveled in its simplicity.
I used Quorn brand naked chik'n cutlets (vegetarian) to make these yummy tacos. But, feel free to use chicken, or another meat if you choose, but going meatless really rocks!. Enjoy ( :


For 4 servings, you will need:


-4 low-carb/low-calorie wheat tortillas
-1 avocado, divided into 4 servings
-prepared pico de gallo (I like the one found at Safeway)
-4 Quorn Naked Chik'n cutlets (prepared and either sliced or shredded)


1. Microwave tortilla for 15 seconds to soften.
2. Place one Quorn cutlet, 1/4 of the avocado, and a tablespoon or two of the pico onto each tortilla.
3. Fold, and eat...delish!
